LEMONADE, THAT COOL REFRESHING DRINK


Boy is it hot and summer hasn't even started. One things for sure, there's nothing like a cool glass of lemonade on a hot, humid day. During the summer, my mom always made a fresh pitcher of lemonade weekly. Throughout the years, she has experimented with so many flavors, fruits and herbs. Each delicious experiment has brought pure joy to friends and family alike. So, I've decided to share a summer time memory with you.

Mommy's Sparkling Minty Peach Lemonade

INGREDIENTS:
2/3 cup of fresh mint leaves
6 cups of fresh water
8 freshly squeezed lemons (more or less depending on your taste)
1/4 cup of lemon juice from concentrate
1 cup sugar; less or more to your liking
1 fresh peach sliced in quarters
2 extra mint leave stems
1 can of ginger-ale

PREPARATION:
Heat the mint leaves in 2 cups of water until boiling. Reduce heat to a simmer and leave for 5 minutes. Let cool, then strain boiled mint leaves. Combine mint water with the rest of the water (4 cups), squeeze in fresh lemons. Add sugar and lemon juice. Stir. Add in peach and extra mint leaves then chill. Add ginger-ale once chilled. Viola! ...Lemonade, that cool refreshing drink!
